Let my morning experience be a lesson to anyone who decides to indulge a selfish whim at a local (unnamed) Tanning Salon in ABACOA!!! Now that my Ceci (2) is in preschool I get 8 hours a week free and rather than scrub stuff at home and wallow in the crushing loneliness of my empty nest I thought I'd get me a little tanning action. There was I, lotioned up, laid out, zoned out and sporting only a pair of goggles and a smile. I upped the fan to max and felt a little tickle on my shoulder, *mmm, nice breeze* I thought...zzzz, ooh, another tickle and a little buzz, WTF?... I removed my goggles to squintily see what can only be described as the Mike Tyson of all hornets crawling across my shoulder. Aggressive, persistent and facially disturbing. Being somewhat of screamer I did. Loudly! Much squealing, thrashing and disrobed bashing ensued and hornet Mike eventually met his end under the heel of my Tory Burch pump... well if you're going to go....

After all this 'relaxation' I felt a treat was in order; nice cup of tea (for the shock you understand) and some of the best chocolate chip banana bread you'll ever eat.
Ingredients:
1 1/4 cups of organic, unbleached a/p flour
1 tsp baking powder
1 tsp baking soda
pinch salt
1 tsp cinnamon
3/4 stick softened butter
1/2 each of light brown sugar & granulated sugar
1 large egg
1 cup very ripe mashed bananas
1 tsp vanilla extract
1 tsp banana extract (optional)
1 cup of good quality chocolate chips (70% cocoa solids)
Method
- Preheat the oven to 350 degrees and grease a 9 inch loaf pan.
- Sift the flour, baking powder, soda salt and cinnamon together in a bowl.
- In your Kitchen Aid mixer (or other electric mixer) beat the butter and sugars together until light and fluffy. Add the egg and mix. Add the banana then the flour and mix well. Fold in the chocolate chips.
- Pour the batter into the pan and bake for around 1 hour or under a skewer comes out clean.
- Cool for several minutes before slicing into generous wedges.
I am definitely making this today.
